These Superfood Breakfast Tacos are a delicious healthy meal. They are packed full of flavor with onions, black beans, cheese, kale, turmeric, ground cumin and garlic powder.
Ingredients
2 tablespoons olive oil
2 cups sweet potato (peel on), chopped into ½” pieces
½ yellow onion, chopped
1 14-ounce can black beans
4 cups tightly packed kale leaves, chopped
9 eggs
½ teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon garlic powder
Salt to taste
