These Sweet Potato Chickpea Quinoa Burgers are packed with nutrients and are the perfect make-ahead meal!
Ingredients
3 sweet potatoes, cut in half the long way
1 can chickpeas, drained and rinsed
1 cup of old fashioned oats, roughly ground
3/4 cup cooked quinoa
1/2 cup red onion, chopped
1 teaspoon of garlic powder
1 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon pepper
½ cup of cilantro leaves, packed
toppings: red onion, tomato, lettuce, spicy brown mustard, ketchup
bun: whole wheat (use gluten free if needed)
