These tender and light Sweet Potato Chocolate Chip Cookies are a low-fat, Vitamin A loaded take on the ultimate cookie classic.
Ingredients
1 cup sweet potato puree (I mashed a leftover baked sweet potato from dinner)
1/2 cup milk of choice (I used almond)
1/2 cup xylitol or unrefined sugar (if you prefer sweeter cookies, add 1/4 cup more)
1/4 cup melted coconut oil
2 teaspoons vanilla extract
1 teaspoon pumpkin spice
1 and 2/3 cups whole wheat flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/3 – 1/2 cup chocolate chips or chunks (preferably fair-trade and sweetened with unrefined sugar)
