Sweet Potato Ice Cream

Sweet Potato Ice Cream with Marshmallow Creme Swirl and Maple Bourbon Topping! Marshmallows can be homemade OR for a quicker treat, store bought!

For the Ice Cream
1 medium Sweet Potato
1 cups Almond Milk
1/2 cup Coconut Palm Sugar
1/4 cup Agave Nectar
1 teaspoon Vanilla Extract
For the Marshmallow Creme
1/3 cup Whole Flax Seeds
2 cups Water
3/4 cup Organic Sugar
1/2 cup Light Corn Syrup or Simple Syrup
1/4 cup Water
1/8 teaspoon Salt
1 1/2 teaspoons Vanilla Extract
OR 8 chopped vegan Marshmallows
For the Topping
3 tablespoons Coconut Palm Sugar
2 tablespoons Maple Syrup
2 tablespoons Bourbon
