2 sweet potatoes, peeled & cut into 1 1/2″ pieces
2 tbsp full fat coconut milk
1 c kale, chopped
1/2 yellow onion, diced
1 tsp garlic powder
1 tsp parsley
1 tsp oregano
salt/pepper to taste
