Ingredients
For the Burger:
⅓ C Quinoa (Red or White) Rinsed
⅓ C Red Lentils
1⅓ C Water
Pinch of Salt
2 medium Sweet Potatoes, about 1½ lb
2¼ Cups Lacinato Kale (AKA dinosaur kale), deveined and chopped (about 12 leaves)
½ C Feta, crumbled
¼ C Minced Chives
2 Cloves Garlic, minced
2 tsp Fresh Lemon Juice
½ tsp Salt
½ tsp Pepper
1½ tsp Smoked Paprika, hot or regular
1 C Panko Bread Crumbs
¼ C Coconut Oil, for pan frying
For the Mayo:
1 C Mayo (Organic)
1 Lemon, juiced
4 Large Cloves of Garlic, minced
2 Pinches of Salt
