A pumpkin pie made with silken tofu – but you’d never know it…it’s just as creamy and wonderful as the “original!”
Ingredients
1 (16 ounce) package silken tofu, drained
1 (15 ounce) can pumpkin purée
¾ cup sugar
2 tablespoons spiced rum (I used The Real McCoy)
1 tablespoon pumpkin pie spice
1 pie crust
Whipped cream topping, if desired
