Vanilla Bean Haupia Coconut Pudding with Caramelized Plantains

½ vanilla bean seeds and pod
¼ cup granulated sugar

For the Caramelized Plantains:

1 large plantain, sliced at an angle into ¼-inch thick pieces
3 tablespoons light brown sugar
1 teaspoon cinnamon
