These Lower Carb Vegan Banana Nut Muffins are full of protein & make a heartier breakfast than everyday muffin from a surprise ingredient!
Ingredients
1 cup almond meal/flour
1 cup quinoa flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
pinch of salt
1 can of white beans, drained and rinsed
2 TB+ of water
1 ripe banana, mashed
1/4 cup almond butter
4 TB grade A or B maple syrup
2 tsp vanilla extract
1/2 cup walnuts, chopped
