These Vegan Biscuits & Gravy {with green} are a healthier take on the southern classic!
Ingredients
2 tablespoons extra virgin olive oil
1 cup button mushrooms, quartered
2-3 tablespoons low sodium soy sauce or tamari
2 tablespoons whole wheat flour
3/4 cups low sodium vegetable broth
3/4 cups non dairy milk (I used soy)
1 teaspoon dried thyme
1/2 teaspoon black pepper
1 cup torn kale leaves (optional)
