Vegan Carrot Muffins
Incredibly light and moist carrot muffins that are very healthy and make the perfect breakfast or snack!
1 flax egg (1 tablespoon ground flax mixed with 3 tablespoons warm water)
1 ripe banana mashed
1/3 cup unsweetened apple sauce
1/4 cup vegetable oil or coconut oil
2 tablespoons maple syrup
1 teaspoon vanilla extract
1/2 cup almond milk
1/2 cup brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground ginger
1.5 cups flour (I used 1/2 cup whole wheat and 1 cup white flour)
2/3 cup rolled oats
1,5 cup grated carrots (about 4 large)
1/2 cup chopped walnuts divided
