Vegan Chocolate Beet Cake
Vegan chocolate beet cake with avocado frosting. Luscious and rich chocolate cake with creamy frosting, your friends will never know its vegan!
Wet Ingredients:
3 roasted beets, pureed (~1 cup)
1 cup soy or almond milk
1 tbsp apple cider vinegar
1/3 cup coconut oil, melted
3/4 cup coconut or white sugar
2 tsp vanilla extract
1 very ripe banana
Dry Ingredients:
1.5 cups AP flour (or whole wheat)
1/2 cup cocoa powder (unsweetened)
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
Frosting:
2 ripe avocados
1/2 cup cocoa powder
1/2 cup maple syrup
1 tsp vanilla extract
2 tbsp coconut oil
1/2 cup powdered sugar (optional)
