Vegan & Gluten Free Little Naked Chocolate Cake
A Little Naked Chocolate Cake like this one is perfect for a mini celebration or a surprise at any celebration. This one-bowl recipe is gluten free and can easily be made vegan by using applesauce in place of yogurt. The texture is a bit like a brownie with a dark chocolate flavour. Vegan Coconut Whipped Cream is also the easiest and quickest ‘frosting’ to make and use.
GLUTEN FREE CHOCOLATE CAKE:
¼ cup unsweetened cocoa powder, plus more for pans
½ cup oat flour
½ cup coconut sugar
½ tsp espresso powder
½ teaspoon baking soda
¼ teaspoons baking powder
¼ teaspoons salt
¼ cup + 2 tablespoons milk
2 tablespoons yogurt or applesauce
2 tablespoons melted coconut oil
¼ teaspoon pure vanilla extract
VEGAN COCONUT WHIPPED CREAM:
½ a 14oz can of coconut cream, chilled in the fridge overnight
1 to 2 tbsp maple syrup
¼ tsp pure vanilla extract
A pinch of salt
