In this vegan lemon pie, fresh light filling contrasts with a rich poppy seed crust and creates an amazing explosion of flavors.
Ingredients
Crust:
¾ cup (100g) ground poppy seeds
1 and ¼ cup (150g) dates, soaked (weight before soaking)
Filling:
1 package firm silken tofu (359g)
¼ (50g) cup soy yogurt (or other yogurt of choice)
juice and zest of one organic lemon (if not organic, do not use the zest)
¼ cup (50g) brown sugar
¼ cup (50g) erythritol (or more brown sugar)
2 tablespoons (15g) egg replacement powder (or cornstarch)
