Vegan Pumpkin Chocolate Chip Bread is made with delicious homemade pumpkin puree, refined sugar free, vegan and gluten free! This bread is soft, decadent AND healthy!
Ingredients
4.6 ounces brown rice flour
4.4 ounces “sweet” sorghum flour
1 tablespoon baking powder
½ teaspoon baking soda
½ teaspoon fine sea salt
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice (or ½ teaspoon cinnamon, ¼ teaspoon cardamom and ¼ teaspoon nutmeg)
1 cup pumpkin puree
1 cup coconut sugar
⅓ cup coconut oil
½ cup + 2 tablespoons coconut milk
2 teaspoons vanilla extract
½ cup vegan chocolate chips, tossed in 2 tablespoons sorghum flour
