These Vegan Pumpkin Oatmeal Streusel Bars are naturally dairy free, gluten free, and totally delicious!
Ingredients
For the crust and topping:
1 1/4 cups oat flour (grind oats in food processor to create oat flour)
2 cups old fashioned oats
1 tablespoon cinnamon
1/2 cup coconut sugar (or brown sugar)
1/2 teaspoon salt
3/4 cup coconut oil, melted
For the filling:
1 15 oz can pumpkin puree
3/4 cup full fat coconut milk
1/4 cup maple syrup
2 teaspoon pumpkin pie spice
1 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon vanilla extract
