Vegan Salted Caramel Apple Oatmeal Bars
Vegan Salted Caramel Apple Oatmeal Bars are a delicious combination of sweet and salty, healthy and are gluten free!
Apple Filling:
2 apples (seeds removed and sliced with a mandolin)
2 tablespoons flour
2 tablespoons coconut sugar
¼ teaspoon cinnamon
½ teaspoon allspice
Bars:
1 ¼ cups old fashioned oats
2 cups 2 tablespoons oat flour ( or make them by grounding rolled oats)
2 ½ teaspoons baking powder
¼ cup coconut sugar
¼ cup maple syrup
1 teaspoon fine sea salt
½ cup coconut oil
1 large flax egg (1 tablespoon flax meal + 3 tablespoons water together for 10 minutes)
1 teaspoon vanilla extract
Salted Caramel Glaze:
½ teaspoon coarse sea salt
2 tablespoons coconut milk
4 tablespoons coconut sugar
1 tablespoon vegan butter
