Vegan Soba Noodle Salad
A fulfilling and colorful Asian style salad with an award-winning chef inspired dressing. To make things even better the pickled vegetables make it a gut bacteria booster.
1 packet soba noodles
1 carrots grated
1 cucumber
1 piece daikon radish about the same quantity as the carrot
1 cup edamame peas frozen or fresh
4 tbsp sesame seeds
1/2 bunch cilantro/coriander chopped
Sauce
3 tbsp grapeseed oil
3 tbsp olive oil
3 tsp soy sauce
2 tsp balsamic vinegar
1 tbsp mirin or substitute
1/2 tsp ginger minced/crushed
1/2 tsp garlic clove crushed/minced
Pickling Juice
2 cups water
1/4 cup white vinegar or rice vinegar
1 tbsp salt
2 tbsp sugar traditionally white, but any will do
