Vegan Strawberry Cream Pie

This pretty pink Vegan Strawberry Cream Pie is made with a strawberry cashew custard and a coconut crust. It’s a delicious dairy-free, gluten-free + paleo dessert recipe.
Ingredients
Coconut Crust:
2 cups unsweetened shredded coconut
2 tablespoons coconut oil
¼ cup coconut sugar (can sub granulated sugar)
1 egg white (chia egg for vegan, see notes)
The strawberry filling:
1½ cups raw cashews, soaked for 1-24 hours (see notes)
1 lb. fresh strawberries tops cut off
½ cup coconut oil, softened
¼-1/2 cup coconut sugar (can sub granulated sugar)
¼ teaspoon sea salt
Juice from ½ lime
Toppings:
Coconut whipped cream
Sliced strawberries
