Vegetable Stir Fry with Peanut Sauce
A delicious and nutritious vegetarian stir fry with easy homemade peanut sauce!
For the Peanut Sauce:
1 cup full-fat coconut milk
½ cup unsalted, unsweetened creamy peanut butter
1 teaspoon yellow curry powder
2 tablespoons soy sauce
1 tablespoon white vinegar
1 tablespoon fresh ginger, grated
¼ to ½ teaspoon sriracha sauce (or similar red chili sauce), optional
For the Stir Fry:
1 tablespoon coconut oil or grapeseed oil
1 red onion, chopped
2 large carrots, peeled and chopped
1 turnip, peeled and chopped
1 red bell pepper, chopped
2.5 cups green beans, chopped
1 large yellow squash, chopped
1 8-ounce can water chestnuts, sliced
3 tablespoons Thai peanut sauce plus more for serving
Brown rice for serving
