Vegetarian Bibimbap
Stir fried veggies with rice, tofu or meat and a fried egg on top makes a quick meal that is incredibly delicious, salty, spicy and altogether wonderful.
1 block of tofu
¾ cup brown basmati rice
½ tsp salt
1 teaspoon rice vinegar
¼ teaspoon red pepper flakes
2 teaspoons sesame oil divided
1 10 oz package of cremini mushrooms, stems removed and sliced
1 zucchini chopped into ½ inch pieces
2 tablespoons soy sauce divided (use tamari to keep it GF)
1 bunch of swiss chard destemmed and roughly chopped
2 carrots peeled and cut into matchsticks
3 fried eggs (optional)
2 scallions chopped
1 tablespoon sesame seeds (optional)
