These vegetarian fajita quesadillas are full of fresh poblano peppers, zucchini, sweet corn and black beans. Perfect for lunch or dinner!
Ingredients
1 tablespoon olive oil
2 poblano peppers, diced (about 1 cup)
1/4 teaspoon salt
1 clove garlic, minced
1 zucchini, diced (about 1 cup)
1 ear corn kernels, removed (about 1 cup)
1 cup black beans
1 tablespoon cumin
1 teaspoon smoked paprika
12 ounces shredded pepper jack or monterey jack cheese
8 10- inch tortillas
Zucchini relish, for serving
