Classic green Stuffed bell peppers gives a Mexican makeover with rice, black beans, corn, salsa and cheese, the perfect vegetarian version of Mexican stuffed peppers.
Ingredients
2 cups Mexican Rice (you can find the recipe here)
4 green bell peppers
4 slices of cheese
1 tbsp butter
For Salsa:
1 cup tomatoes, finely chopped
½ cup onions, finely chopped
¼ cup capsicum (green bell pepper), finely chopped
Salt to taste
1 tsp chili flex
1 tsp black pepper powder
½ tsp vinegar
