Ingredients
½ small onion
1 tbsp olive or vegetable oil
5 cups/350g roughly chopped mushrooms
2 cups vegetable stock
⅓ cup cream
Salt and pepper to taste
Optional:
Strictly speaking, this soup is so good it doesn’t need anything extra, but if you like to experiment then parsley, coriander, thyme, rosemary, garlic and ginger all pair well.
