watermelon radish & fennel slaw with tahini miso dressing
Definitely a more edgy version of slaw, starring some not so familiar ingredients such as fennel bulbs, watermelon radishes, green cauliflower & shallots; all shaved very thinly on a vegetable mandolin and tossed in a creamy tangy tahini miso lemony dressing.
Seriously refreshing raw veggie goodness
1/2 small head green cauliflower
5 small fennel bulbs
2 watermelon radishes
3 green onions, very finely chopped into rounds
2 tbsp fresh parsley finely chopped
1 tbsp fresh mint finely chopped (optional)
For dressing:
2 tbsp tahini
4 tbsp shiro miso
1 small garlic clove
3 tbsp lemon juice or lime juice or any light vinegar
1/4 cup + 1 tbsp water
1/4 tsp stevia powder
black pepper to taste
