Whole Wheat Sweet Potato Cinnamon Rolls
Tender, gooey cinnamon rolls with a healthy, sweet potato twist!
¾ cup (180 mL) milk (whatever kind, I used almond milk)
1 packet (7 g) instant yeast
1 Tbsp (14 g) sugar
¼ tsp (2 g) salt
1 tsp (2.6 g) cinnamon
2 Tbsp (30 g) softened unsalted butter
½ cup mashed sweet potato (about 1 potato, roasted, skinned, and smashed)
2 eggs
2 ½ cup (300 g) all-purpose flour
½ cup (60 g) whole wheat flour
2 Tbsp (30 g) softened butter
½ cup (90 g) packed brown sugar
¼ cup (50 g) white sugar
1 Tbsp (7.5 g) cinnamon
⅛ tsp (.5 g) ground cloves
Pinch of salt
4 oz (113 g) cream cheese
4 Tbsp (56 g) softened butter
½ cup (50 g) confectioner’s (powdered) sugar
½ tsp (2.5 mL) vanilla extract
Milk as needed
