These zucchini banana muffins are vegan and the perfect breakfast or snack!
Ingredients
2 flax eggs (2 tablespoons flaxseed meal + 6 tablespoons hot water)
2 cups whole wheat flour
1 tsp. baking soda
1/2 tsp. salt
2 overripe bananas
1 cup finely chopped zucchini
1/4 cup 100% maple syrup
3/4 cup unsweetened applesauce
1/4 cup vegetable oil
1 tsp. vanilla extract
1 cup cacao baking chips (optional, but recommended)
