¾ cup rolled oats
¾ cup spelt flour
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
2 eggs, separated
1 tablespoon brown sugar, packed
1 teaspoon blackstrap molasses
2 teaspoons vanilla extract
¼ cup vanilla-flavored yogurt
2 medium zucchini, grated
1 cup buttermilk
3 tablespoons chopped walnuts
2 tablespoons raisins
Maple syrup and extra walnuts, to serve
