Zucchini Mac and Cheese – Easy mac and cheese recipe with shredded zucchini, brown rice elbow macaroni, almond milk and a bit of cheese.
Ingredients
1 lb zucchini (2 cups packed), shredded & not squeezed
4 oz (1 cup packed) cheddar or marble cheese, shredded
2 cups elbow macaroni, uncooked (I used brown rice)
3 tbsp butter, salted
3 tbsp whole wheat flour
1 1/2 cup + 2 tbsp milk of choice (I used almond milk)
3/4 tsp himalayan pink salt
1/2 tsp garlic powder
