Feel like a change from oatmeal? This is half steel-cut oatmeal, half quinoa. This makes it creamier than quinoa porridge, but still has that nutty, earthy flavor that regular oatmeal lacks. Plus, it’s a way to eat zucchini for breakfast!
Ingredients
1 cup almond milk
1 cup water
¼ cup steel-cut oats
¼ cup quinoa
Pinch of salt
1 very ripe banana
¾ teaspoon ground cinnamon
1/8 teaspoon ground ginger
Pinch of ground nutmeg
1 teaspoon vanilla extract
1 zucchini
2 – 3 tablespoons chopped walnuts
2 tablespoons raisins
