Quinoa Pilaf with Za’atar spiced Butternut Squash

A beautifully fragrant Quinoa Pilaf with Za’atar roasted Butternut Squash, Persimmon, Pomegranate and Pistachio.
Ingredients
500g (1 pound) butternut pumpkin, peeled, deseeded and cut into triangles
1 1/2 tbs za’atar
1 1/2 tbs olive oil
1 large shallot, diced
1 cup quinoa
1 cinnamon stick
4 cardamom pods, lightly crushed
3 bay leaves
1 1/4 cups vegetable stock
zest of 1/2 a lemon
1/2 a persimmon, cut into triangles
1/4 cup pomegranate seeds
1/4 toasted pistachios, roughly chopped
1/2 cup coriander, roughly torn or chopped
salt and pepper to taste
