A spongy, gluten-free classic vanilla cake topped with a fluffy chocolate frosting.
Ingredients
For the vanilla cake:
3/4 cup brown rice flour
1/4 cup almond flour
2 tablespoons AP gluten-free flour (or use oat or brown rice)
2 teaspoons baking powder
1/4 teaspoon sea salt
3/4 cup coconut sugar
1/4 cup coconut oil, melted
3 eggs
1 teaspoon pure vanilla extract
For the chocolate frosting:
1 1/2 cup raw cashews, soaked in water for 2 hours and drained
2-4 tablespoons filtered water
2 ounces dark chocolate, chopped
3/4 cup full-fat coconut milk
1 tablespoon coconut oil
2 teaspoons pure vanilla extract
3/4 cup maple syrup, adjust to taste
Pinch of sea salt
