Savory bread pudding
This seasonal savory bread pudding is a great rustic side dish to prepare for the holidays. Topped with sharp cheddar and portobellos, leeks, granny smith apples infused with fresh herbs its a great play on traditional bread pudding.
6 cups country rolls cut into bite size cubes
2 tablespoons extra virgin olive oil
4 organic eggs
1 tablespoons unsalted butter
1 leek chopped (all parts)
8 portobello caps chopped
1 granny smith apple chopped
2 cloves of garlic minced
1/3 cup minced fresh parsley
1 tablespoon fresh thyme
1 teaspoon of nutmeg
1/4 cup of red wine (or sherry)
1 1/2 cups heavy cream
1 cup vegetable stock
1 1/2 cups of grated sharp cheddar
