12 cups peeled, cored, and slice apples—packed down tightly
2 3/4 cups granulated sugar
3/4 cup ClearJel
1 1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
3 1/2 cups water
1 vanilla bean
1/3 cup Bourbon
