These soft and flavorful Tomato Rice Patties with crispy edges make for a delicious plant-based lunch or dinner.
Ingredients
about 2.5 cups (500g) cooked brown rice
½ cup (55g) dried tomatoes in oil, chopped
¼ cup (60g) tomato puree
2 tablespoons oil from the tomatoes (or olive oil)
1 teaspoon garlic powder
1 tablespoon basil
⅔ cup (150g) soft smoked or regular soft tofu (silken would probably also work)
salt to taste
