This chia pudding is packed with superfoods – coconut water, plenty of vegetables, and chia seeds (of course). Plus, it’s like eating a bowl of carrot cake for breakfast.
Ingredients
2 carrots, peeled and grated (~1 cup)
⅔ cup ZICO Pineapple Coconut Water
⅓ cup pumpkin puree
1 apple, grated
1 teaspoon vanilla extract
¼ teaspoon ground cinnamon
⅛ teaspoon ground ginger
Pinch of ground nutmeg
2 tablespoons chia seeds
Toppings: Shredded coconut, chopped walnuts and raisins
