gluten-free carrot cupcakes

Ingredients
WET INGREDIENTS
6 tbsp flax meal dissolved in 1 cup hot water
4 cup grated carrots
1 banana, mashed
1 cup molasses
1/2 cup honey
1/2 cup coconut oil, melted
DRY INGREDIENTS
3 cups gluten free flour (I used 1 cup quinoa flour + 1 cup brown rice flour)
1 tsp guar gum
1 1/2 tsp baking powder
2 1/2 tsp baking soda
4 tsp cinnamon
1 1/2 tsp cloves
1 1/2 tsp nutmeg
