Non-traditional tacos filled with butternut squash, roasted onion, corn, lettuce and jalapeños. Gluten-free, vegan and highly customizable (of course).
Ingredients
1 ½ pounds (640g) butternut squash
1 red onion
Salt, to taste
6 small corn tortillas
Chopped romaine lettuce
1 cup cooked corn kernels
3 roasted and chopped jalapeño peppers
Optional extras: chickpeas, chopped avocado and/or cilantro
