A spin on Eggplant Parmesan using an onion ring method for the breading.
Ingredients
Eggplant, sliced
For Milk Mixture:
1/4 C Flour
1 tsp Corn Starch
1/2 C Milk (I used Almond Milk)
For Breadcrumb Mixture:
1/8 tsp Garlic Powder
1 Tbsp Nutritional Yeast (you could sub Parmesan cheese)
1/2 C Breadcrumbs
