Easy roasted sweet potato, pinto bean and kale quesadillas.
Ingredients
2 medium sweet potatoes
1/2 tsp. cumin
1/2 tsp. chili powder
1/2 tsp. salt
1-2 tablespoons extra-virgin olive oil, divided
2 garlic cloves, peeled and minced
1 (15-ounce) can pinto beans, drained and rinsed
1/4 tsp. red pepper flakes
2 cups chopped kale
2 cups shredded cheese (I used a combination of Cheddar and Monterey Jack)
8 large flour tortillas
