Dutch Pear Tarts (Perrensloffen)

Flaky pastry crust, delicious homemade almond paste, and Bosc pears.
Ingredients
DOUGH:
3 ⅓ cup flour (2 ⅓ cup all-purpose & 1 cup whole wheat or completely all-purpose)
2 cups cold unsalted butter, diced
1 tsp salt
1 cup cold water
ALMOND PASTE:
½ cup almond paste (store bought or homemade)
PEARS:
4 Bosc pears
3 Tbsp lemon juice (juice from 1 ½ lemons)
3 Tbsp honey
¾ tsp ground cinnamon
GLAZE & GARNISH:
1 Tbsp honey
1 tsp sugar
