This rich and creamy Thai Tomato & Squash Soup is packed with roasted tomatoes, butternut squash, red curry, and coconut milk! {vegan, gluten free}
Ingredients
6 large tomatoes
1 tablespoon olive oil
salt and pepper
1 tablespoon coconut oil
1 yellow onion, diced
2 cups butternut squash, cut into 1/2” cubes
2 tablespoons red curry paste
1 teaspoon cumin
1 14 oz can light coconut milk
4 cups low sodium vegetable broth
1-2 teaspoon maple syrup (optional)
salt and pepper to taste
fresh cilantro leaves and lime juice to garnish
