Apple Gouda Hand Pies

Sweet, hand held apple pie in a flaky Gouda cheese crust.
Ingredients
2.5 cups (300 g) all-purpose flour (+more for rolling)
½ tsp (2.5 g) salt
¾ cup (170 g) unsalted butter, cold and cubed
¼ cup (56 g) shredded gouda cheese
¼ to ½ cup (60 to 120 mL) ice cold water
1 egg, whisked
2 apples (tart variety, like Pink Lady or Granny Smith)
1 tsp (5 mL) lemon juice
½ cup (100 g) dark brown sugar, packed
1 tsp (5 g) cinnamon
¼ tsp (1.5 g) nutmeg
1 Tbsp (7.5 g) all-purpose flour (+ more as needed)
A few small, thin slices of Gouda (about 20 g)
A dash of coarse sugar
