Healthy Tomato Soup
Making your own delicious tomato soup has never been easier than this, it’s also super tasty and healthy too!
I’ve topped mine with pumpkin seeds and coriander, but feel free to experiment with any nuts or seeds that you prefer.
This recipe also calls for vegetable broth and I have a great easy recipe for this too which is so simple to make and a great way of using up vegetables. It also tastes so much better than shop bought ones.

3/4 cup/150g tomatoes, chopped
1 x 400g can chopped tomatoes
150ml vegetable broth
1 onion, finely diced
2 garlic cloves, minced
1 tsp. turmeric powder
1 tsp. coconut oil
1 tsp. dried basil
1 tsp. mixed herbs
1 tbsp. apple cider vinegar
Freshly ground black pepper
Optional: pumpkin seeds, coriander to garnish
