All the fragrant, creamy deliciousness of Thai green curry wrapped up into refreshing spring rolls with a simple green curry dipping sauce.
Ingredients
14 oz block of extra firm tofu
1 Tbsp soy sauce
1 tsp freshly grated ginger
1 Tbsp oil
1 clove garlic, minced
1 ½ Tbsp green curry paste
½ tsp lime juice
½ tsp sugar
½ cup full fat coconut milk
If you have it, 2 kaffir lime leaves
2 oz (60 g) thin rice vermicelli (rice noodles)
8 to 10 rice flour spring roll wrappers
1 red bell pepper, thinly sliced
1 large carrot, shredded
1 handful of Thai basil (can sub sweet basil or mint if you can’t find Thai basil)
1 handful cilantro
1 lime
