Tofu Breakfast Tacos
Switch up your taco Tuesday routine with these tasty tofu breakfast tacos with coconut bacon. You’ll be making them on repeat!
For the Coconut Bacon:
1½ cups unsweetened coconut chips
2 tablespoons soy sauce
1 teaspoon maple syrup
½ teaspoon paprika
1 tablespoon liquid smoke
¼ teaspoon ground black pepper
For the Tofu:
1 tablespoon olive or canola oil
15 oz. extra firm tofu, crumbled
⅛ teaspoon dried turmeric
¼ teaspoon cumin
¼ teaspoon paprika
3 tablespoons unsweetened almond milk
2 tablespoons nutritional yeast
Salt and ground black pepper, to taste
For the Beans:
1 tablespoon olive oil
1 clove garlic, minced
1 (15 oz) can low sodium black beans
2 tablespoons salsa
To Serve:
Tortillas, hot
