This Tuscan Vegetable Pasta Soup is so easy to throw together and is perfect for those cool fall days!
Ingredients
2 tablespoons extra virgin olive oil
4 cloves garlic, minced
1 Medium yellow onion, diced
1/2 cup carrot, chopped
1/2 cup celery, chopped
1 Medium zucchini, sliced and quartered
1 15 oz can diced tomatoes
6 cups low sodium vegetable stock
2 tablespoons tomato paste
6-8oz whole wheat pasta (I used bow ties)
1 15 oz can white beans
2 large handfuls baby spinach
6 Dorot basil cubes
salt and pepper, to taste
fresh chopped parsley, for garnish
