A simple spaghetti squash pasta dish made with mushrooms, sage and cherry tomatoes; a light vegan, paleo and gluten-free fall/ winter pasta dish.
Ingredients
1 medium spaghetti squash (about 2-3 lbs)
1 tbsp olive oil
1/2 yellow onion (thinly sliced)
200 gms cremini mushrooms
2 tsp garlic (finely chopped)
10-12 fresh sage leaves (torn)
6-8 cherry tomatoes (sliced)
salt to taste
fresh crushed black pepper to taste
1/2 tsp dry herbs (thyme, oregano, basil etc.)
toasted pine nuts/ walnuts (optional)
