Orange, Almond, and Sumac Cake, a recipe for a naturally sweetened vegan layer cake made with spelt flour, maple syrup, and sumac.
Ingredients
3 cups light spelt flour
2 cups almond flour
3 tsps sumac
zest of 1 orange (about 2-3 tsps)
2 tsps baking powder
2 1/2 tsps baking soda
1/2 tsp salt
1 1/2 cups non-dairy milk
1 1/2 tbsps lemon juice
1 tsp vanilla
3/4 cup grapeseed oil
1 1/2 cups maple syrup
For the coconut cream frosting:
2 cups coconut cream
1 tsp vanilla
2 tbsp organic powdered sugar or 2 tsp maple syrup
Marmalade, optional
