Apple Cider Caramels

Apple cider caramels that are sweet, bursting with cinnamon and are perfect for Rosh Hashana.
Ingredients
- 4 cups apple cider*
- ½ teaspoon ground cinnamon
- 2 teaspoons flaky sea salt/1 teaspoon finer salt
- 1 stick/8 tablespoons unsalted butter, cut into chunks
- 1 cup granulated sugar
- ½ cup packed light brown sugar
- ⅓ cup heavy cream
- Neutral oil for the knife
